Delicious Corn Chowdah

Ahh, it’s been a while!! One of my goals this summer was to be more active on the blog sharing recipes, healthy living insight, and keeping myself engaged with writing. It’s pretty obvious, though, that it fell to the wayside [oops!!]. Regardless, this summer has been so wonderful! We’ve traveled a lot – a day in Charleston and a week in Myrtle Beach with my boyfriend’s family, a night at a Virginia B&B to experience incredible fresh oysters & crabs, a fantastic weekend in Maine celebrating a close friend’s birthday with lobster, sailing, and R&R by the water…

Hawaiian Love Smoothie

by 1 Comment Morning Meals, Recipe

Six years ago my brother and sister-in-law married each other on the beautiful island of Kaua’i. My family spent about a week on the island – exploring, swimming, getting sunburns, and soaking up the Hawaiian air. It was one of the best trips I’ve ever taken. I loved absolutely everything about the islands – I loved the people, the weather, the simplicity. And there was this feeling of magic in the air – the spirit of Aloha. Needless to say, I was hooked. As we were waiting for our plane to depart at the airport to take us back…

Tangy Rhubarb Vinaigrette

Long time, no write! Eek! With life a bit of a whirlwind lately, I’ve hardly had any time to devote to BITG. Being this is more of a “passion project”, it seems its one of the first things to be put on the back burner [why is that?!]. But I’ve been really seeking balance lately, including reducing my classes a bit, putting less pressure on myself [a.k.a. working on my perfectionism], and really focusing on what serves me. When all is said and done, the goal is to get BITG posts back on their weekly schedule! Much easier…

Sueños Naranja Cocktail

Cocktail?! Did I grab your attention yet? It’s Friday – the freakin’ weekend – and I’ve had a craving to pop a bottle of champagne all day. Weird? I think so, but maybe its the sunny weather, the blooming flowers, or the fact that I just feel like celebrating [nothing in particular]. When 4 pm rolled around, I decided I did enough work for the day [plus got a great workout in this morning] that I deserved a nice adult drink. I don’t drink often, mind you – some weeks/weekends I don’t even think about it – but…

Homemade Plantain Chips

With Spring finally in full swing around here, I’ve been dreaming of blooming flowers, sweet sunshine, and getting my bikini body ready for the warmer days ahead. Besides Tone It Up’s Bikini Series coming up next week, I’ve been trying to eat greener, leaner, and cleaner – something I’m constantly striving for, but especially this time of year! This means, extra veggies and protein but very minimal grains, some low-fructose fruit and lots of healthy fats [which, contrary to popular belief, are to be embraced! Not feared.] Sometimes the most difficult thing for me to…

Flourless Almond Butter Chocolate Brownies

It’s Friday!! I love Fridays. I mean, who doesn’t? It’s the end of the week with the weekend glowing ahead of you, calling your name. For me, Fridays are the days I get to work on posts & recipes for BITG, to kick homework’s booty, and generally catch up from the week. This week in particular was a roller coaster of emotions – I feel like I’m at a really pivotal point in my career [& life!] and its been weighing on me a ton. But I’m really working on changing my perspective, opening myself…
