I love breakfast. I love, love, love breakfast. Well, I love food, in general, but breakfast is the most important meal of the day, right? Right. So a featured post that I’ll be including on the reg is going to be [Morning Meals]. I’m fortunate to have time most mornings to whip up my first meal of the day without the stress of rushing off to work directly afterwards. Does that mean my breakfasts usually consist of complicated ingredients & recipes and long, leisurely sips of my coffee? Well, the coffee part is true, but complicated ingredients and recipes is so not.
My faves? Oatmeal with seasonal fruit & almond milk when its chilly or I need a little extra sustenance. Protein-powered pancakes like the Perfect Fit Pancakes from my girls over at Tone It Up after a hard workout. A simple green smoothie or chia pudding to customize to my morning mood. And sometimes I just sip on tea, coffee, or a fresh green juice until my stomach starts talking to me!
So I’m sharing a couple of my faves today – my Glowing Green Smoothie & Chocolate Chia Pudding.
First up – Glowing Green Smoothie. I love green smoothies so much because. .
–Fiber! So much fiber.: makes us feel fuller for longer; essential for proper digestion; helps control blood sugar, keeps your heart healthy!
-Chock full of nutrients, dark leafy greens, as you know, are full of pure nutrition that allow our body to function optimally & give us energy
-Keeps you hydrated: the components [produce, etc] in a green smoothie are naturally full of H2O, thus when consuming the smoothie you’re hydrating yourself which is so important!
-Great vehicle for superfoods: nutrient-dense & brimming with antioxidants, superfoods do well blended into smoothies and offer many vitamins & minerals that help you achieve optimum health
–Convenient: this one’s a no brainer– pour that smoothie into a to-go cup or mason jar, screw the lid on & you’re good to go!!
Glowing Green Smoothie
- 1/2 banana*
- 1 peach*
- 3 leaves kale, large handful spinach, or other greens
- 4-6 oz. aloe vera juice
- 1/2 cup full fat Greek yogurt, dairy-free yogurt, or kefir
- Coconut water or almond milk [whatever amount yields your desired consistency]
- Optional : 1 inch peeled gingerBlend until smooth, adding more liquid if too thick. Enjoy! *[Use fresh or frozen.]
Next – Chocolate Chia Pudding. I love this for breakfast, snack, even dessert. Its so simple to create, you can make it ahead of time & really hits a sweet spot!
I prefer to use raw cacao powder, not baking cocoa, which I strongly advise against because baking cocoa is very processed, losing all the healthy antioxidants & minerals that cacao contains.
Chocolate Chia Pudding
- 1 3/4 cup [14 oz] canned organic coconut milk
- 5 tbsp chia seeds
- 2 – 3 tbsp organic raw cacao powder [Depending on the level of chocolateyness you want. Oh yes, chocolateyness.]
- Pinch of coarse sea salt
- Toppings : sliced banana, berries, nuts, goji berries, cinnamon, cayenne, more cacao, you name it
Combine all ingredients [except toppings] in either the blender or a large bowl using a spoon. When everything is evenly mixed, either pour mixture into 3 or 4 separate containers [mason jars are awesome for this job] put into the fridge. Let it sit for at least four hours or overnight. After its set & you’re ready to eat, remove the top of whatever storage container you used and finish it off with your favorite toppings. Eat & enjoy!!
I urge you to purchase fair-trade cacao always to support those who provide this amazing superfood for you. And also purchase organic whenever possible!
