I fell off the wagon.
I’ve been doing pretty well sticking to my January goals – I’ve completely cut out gluten [a goal I intend to stick with beyond January], had only about 3 glasses of wine [I know, whoops], have had one decaf latte [does that count as real coffee?], and have drastically lowered sugar intake. Ok, I’m not perfect – my goal was to cut everything out completely. But you know what?! January isn’t over yet and I’ve stuck to no gluten 100%, which was most important to me from the beginning.
These No-Bake PB Coconut Balls, though . . they got me. I had an intense sweets craving and needed to whip something up ASAP [hello, TOM]. They’re made with chocolate chips – which is what is truly the bad guy here [I mean, if you can call chocolate BAD] – and sweetened with maple syrup, so its not all yucky white sugar. I was inspired by Oh She Glows’ Peanut Better Balls for this, but ended up putting a BITG twist on ’em and they turned out to be incredible!!
No-Bake PB Coconut Chocolate Balls
Makes about 9 balls
- 1 cup peanut butter [can be substituted for other nut butters]
- 4 tbsp pure maple syrup
- 2 tbsp oats
- 3 tbsp unsweetened shredded cocount
- Pinch of sea salt [a little goes a long way]
- 1/4 cup chocolate chips
Mix peanut butter and maple syrup with a hand mixer on high until the mixture becomes thick. Mix in oats, coconut, and sea salt until just blended, then gently stir in chocolate chips. The batter may be a little sticky, but it should be the consistency of good cookie dough – not too sticky, but still moist. Form into golf ball-sized balls and place on a plate or in a container to be placed in the fridge. Keep in the fridge for at least an hour before enjoying. You can also roll in shredded coconut if you’d like to add a little extra coconutty flavor!
I am a peanut butter, chocolate & coconut fiend!! My boyfriend can’t get enough peanut butter-chocolate goodness either, so I’m thankful for the small bit of self-control we have – otherwise all of these little bundles of sweetness would have been gone in an instant.
