What a week – its hard to believe I was flying in from Phoenix on Monday evening! Since then I’ve only worked two days, thanks to this chilly East coast weather & the snowfall canceling my initial flight/calling off school & work! Needless to say, my days are jumbled and my weekly routines have been thrown out the window. But I’m happy to have had both yesterday and today to get my head back in the game and finally check some things off my to-do list.

It really feels like its been so long since I’ve been able to test out recipes or ingredients. So, because of this weird work week, I was able to get all my school work finished yesterday and have taken full advantage of using my Friday to get playful in the kitchen [get ready for some fun recipes coming soon!!]! I’ve been able to spend both my extra day off yesterday and today at my boyfriend’s office, From The Farmer, so I came in completely unprepared and allowed whatever was in their kitchen pantry or cold room be my inspiration – he does run a produce company, so I wasn’t the least bit worried I’d find the supplies I need!

Recently, FTF delivered some local popping corn as a fun treat in the weekly basket. I’ve been dying to try out different flavors because I LOVE popcorn. If I could, I’d eat popcorn for breakfast, lunch, dinner, and dessert. And I’m not exaggerating! I thought it’d be the perfect opportunity to get some fun popcorn recipes up & ready for the weekend – the perfect snack for movies, reading, and something fun & different when friends are over! 

Never popped your own popcorn before? Don’t fret – it’s simple! Use the instructions below to get fresh, perfect popcorn so you can begin adding your exciting flavors to it. Note: each flavor recipe calls for 6 cups of popcorn, so double or triple the ingredients as needed.

Get ready for something sweet, something savory, and something totally unique!

Stovetop Popcorn
Makes about 6 cups popcorn.

  • two tablespoons high-heat oil [I used avocado oil, but coconut works well too.]
  • 1/3 cups popping corn kernels

In a medium- or large-sized pot, heat oil over medium heat. Throw a couple kernels in the oil from the beginning, and as soon as they pop you know that the oil is ready. When it is, pour the rest of the kernels in the pot and toss around so they all become coated with the oil. Place a lid on the pot – leave it cracked so hot air can escape, but not so open that kernels jump out when the popping begins. Soon the popping will begin! When it comes to a stop, or significantly slows, all – or most – of the kernels have popped. Be sure to remove the pot from the hot stovetop so the popcorn does not burn.

Cinnamon Sugar Popcorn

  • 1 tbsp coconut oil, melted
  • 3 tsp date or coconut sugar
  • 1/2 tsp cinnamon
  • pinch of sea salt

This oldy-but-goody flavor combo is perfect for sweetening up your popcorn snack or making it into a dessert! I used date sugar, which has a very subtle sweetness I love, but feel free to use coconut sugar instead. Simply drizzle a tablespoon of melted coconut oil over your popcorn, toss in a large bowl, then add in the cinnamon & sugar [pre-mixed], toss again, then enjoy!

Spicy Chili Popcorn

  • 1 tbsp coconut oil, melted
  • 4 tsp chili pepper powder
  • 1/8 tsp cayenne
  • pinch of sea salt

This combo is HOT HOT HOT. I love spicy foods, but cannot handle anything that is outrageously hot – this mix is the perfect amount of heat! Its spicy, but still has a fantastic flavor that doesn’t burn your tastebuds. As you would with the Cinnamon Sugar Popcorn, drizzle a tablespoon of melted coconut oil over the popcorn in a large bowl, toss, then sprinkle the Spicy Chili mix over it, and toss again. This is the perfect savory snack when you want something light & crunchy.

Peanut Curry Popcorn

  • 1 1/2 tbsp coconut oil
  • 3 tbsp peanut butter, no sugar added
  • 2 tsp curry powder

This unique snack is a messy, but super delicious, flavor punch! On low heat, warm the coconut oil & peanut butter, whisking together as it becomes liquid; then add the curry powder to the mix and stir until its completely combined. Drizzle the peanut-curry mix over the popcorn in a large bowl and toss until all the pieces are coated. If you allow the popcorn to sit for a few minutes, the flavors and liquid will absorb a bit and it will be a little less messy. But if you don’t mind finger lickin’ goodness, then dig in right away!
